Stir together dry ingredients then stir into sugar mixture.
Fold in rhubarb. Pour into 2 greased & floured loaf pans; filling about 2/3 full.
Topping
Combine sugar, softened butter and cinnamon. Sprinkle on top of bread then bake for 40 minutes @ 325°.
Notes
You can either make loaves or muffins! Be sure to spray the muffin cup with nonstick spray for easy paper removal! I would bake for about 20 minutes and check to ensure toothpick is clean before removing from oven.
