Rhubarb Bread

Ingredients

Bread

  • 1 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 cup buttermily
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 tsp vanilla
  • 2 1/2 cup flour
  • 1 tsp baking powder
  • 1 1/2 cup rhubarb diced

Topping

  • 1/2 cup sugar
  • 1 Tbsp butter
  • 1/2 tsp cinnamon

Instructions

Bread

  • Combine sugar & vegetable oil. Add egg, buttermilk & vanilla. Beat well.
  • Stir together dry ingredients then stir into sugar mixture. Fold in rhubarb. Pour into 2 greased & floured loaf pans; filling about 2/3 full.

Topping

  • Combine sugar, softened butter and cinnamon. Sprinkle on top of bread then bake for 40 minutes @ 325°.

Notes

You can either make loaves or muffins! Be sure to spray the muffin cup with nonstick spray for easy paper removal! I would bake for about 20 minutes and check to ensure toothpick is clean before removing from oven.
