Ingredients

  • 1/4 cup butter
  • 1 med onion chopped
  • 1 can corn drained
  • 1 can cream corn
  • 1 reg egg beaten slightly
  • 1 box Jiffy corn muffin mix
  • 1/2 tsp thyme
  • 8 oz fat free sour cream

Instructions

  • Melt butter in fry pan & cook onions. Mix corn, egg, muffin mix, spices & sour cream. Bake @ 350° for 30 minutes or until tester is clean.
  • Add green chilies or peppers for added flavor.
