Buckwheat Pancakes

Ingredients

  • 3/4 c white flour
  • 3/4 c whole wheat flour
  • 1/4 c wheat germ
  • 1/4 c ground flax seed
  • 2 eggs
  • 1 t baking soda
  • 1 t salt
  • 2 t baking powder
  • 2 T sugar
  • 4 T vegetable oil
  • 3 c buttermilk

Instructions

  • In a large bowl, sift together the flours, baking powder, baking soda, ground flax, salt and sugar. Make a well in the center and pour in the buttermilk, eggs and vegetable oil; mix until smooth.
  • Heat a lightly buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.

Notes

Add an extra 1/2 to 1 cup of buttermilk for added flavor!
