Roger’s Chili – Old Recipe

Roger's Chili

Ingredients

  • 2 Tbsp vegetable oil
  • 2 lb beef stew cubed
  • 1 cup onion
  • 1 whole green pepper
  • 1 12oz can tomato paste
  • 2.5 cup water
  • 1 whole jalepeno
  • 1.5 Tbsp chili powder
  • 1.5 tsp crushed red pepper
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp cumin
  • 1 15oz can pinto beans
  • co-jack cheese

Instructions

  • Sauté onion and beef stew in pan. Transfer to crock pot. Add remaining ingredients except pinto beans.
  • Cook on high for 6 hours or medium for at least 8 hours. Add pinto beans about 15 minutes prior to serving
  • Top with cheese. Serve

Notes

This recipe is versatile!  I modify and use 1 bottle of beer + 1 cup of water (instead of 2.5 c water).
Other additions include: 1 can black beans or top with cilantro
