Stuffed Chicken Rolls

These make for a testy surprise and work well served over rice or pasta!

Ingredients

  • 6 boneless skinless chicken breasts
  • 6 slices ham fully cooked
  • 6 slices swiss cheese
  • 1/4 cup all-purpose flour
  • 1/4 cup Parmesan cheese grated
  • 1/2 teaspoon rubbed sage
  • 1/4 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 Tablespoon canola oil
  • 1 can condensed cream of chicken soup undiluted, 10-3/4 ounces
  • 1/2 cup sour cream
  • 1/2 - 3/4 cup cooking wine Use water if no wine!
  • Chopped fresh parsley optional

Instructions

  • Flatten chicken to 1/4-in. thickness; top with ham and cheese. Roll up and tuck in ends; secure with toothpicks.
  • In a shallow bowl, combine the flour, cheese, sage, paprika and pepper; coat chicken on all sides. In a large skillet, brown chicken in oil over medium-high heat.

SLOW COOKER INSTRUCTIONS

  • Transfer to a 5-qt. slow cooker. Combine soup, sour cream and cooking wine; pour over chicken. Cover and cook on low for 4 hours or internal temp reaches 160°. Remove toothpicks. Garnish with parsley if desired.

OVEN BAKED INSTRUCTIONS

  • Transfer to a 9x13 dish. Combine soup, sour cream and cooking wine; pour over chicken. Cook on 375° for 30-45 minutes or internal temp reaches 160°. Remove toothpicks. Garnish with parsley if desired.

Notes

Some ideas for versatility:
Layer fresh spinach on cheese and ham
Use cream cheese instead of swiss cheese
Add a few slices of red, yellow or green pepper
Use Canadian bacon or regular bacon instead of ham
