Tomato, Corn, Black bean salsa with cilantro

This recipe is not picky at all but flavorful tomatoes is a must! Use your judgment with the ingredients – it won’t hurt to add more tomatoes, peppers, corn, jalapeno. Use what you like! Tweak the taste by adding salt if needed. Add vinegar if the tomatoes don’t have much flavor.

*Add guacamole if you like!

  • 2 cups tomatoes chopped
  • 1 jalapeno pepper diced - I include seeds!
  • 1 can black beans drained & rinsed
  • 1 cup roasted corn frozen
  • 1 small red onion finely chopped
  • 1/2 cup peppers red, green, yellow - whatever is on hand
  • 1/4 cup lime juice
  • 1 tsp garlic minced
  • 1 tsp Extra-virgin olive oil
  • 1 bunch cilantro chopped fresh


  • Mix all ingredients together and serve!
